HARVEST PERIOD: Second ten days of October

VINIFICATION: Long maceration with the skins for at least three weeks;
Temperature below 30 ° during fermentation;
Temperature between 25 ° / 28 ° in the phase of maceration with the skins;
Temperature between 20 ° / 22 ° until after malolactic fermentation;
Passage in small wood - Barriques or Tonneaux - of French oak with completed malolactic fermentation.

AGING: 36 months in total, provided for by the production disciplinary, divided as follows:

12 months in small wood - Barriques or Tonneaux;
12 months in steel;
12 months in the bottle.
COLOR: Intense ruby ​​red with garnet hues (typical of the Sagrantino grape).

BOUQUET: Spicy, with hints of cinnamon, which must not cover the aromas of red fruit, cherry or black cherry, which can evolve to dried plum with aging in the bottle.

TASTE: Very full and persistent, rather tannic with a pleasant bitter aftertaste.

PAIRING: With second courses of red meat, game and aged cheeses.

EVOLUTION: It is a wine that can evolve in the bottle, if well preserved, for 10 or more years.
