Vinification
Selection of the grapes in the vineyard, fermentation and maceration for about 15 days in stainless steel containers, followed by malolactic fermentation in November.

Refinement
Aging in 50-60 Hl French oak barrels. The duration of aging is 16 months, assembly in spring, bottling in summer.

Organoleptic characteristics
Intense ruby red color with purple reflections, the nose presents a fruit in full maturity, with excellent fresh implications. In the mouth the tannin is important, maintaining the classic backbone of Barbera, also due to its pleasant acidity.

Note
Barbera in literature: in Piedmont they are usually feminine, both the grape and the wine, elsewhere, are diversified: grape in the feminine and wine in the masculine. However, with both genres it appears with some Piedmontese and non-Piedmontese authors. The Tuscan Carducci, after visits to Piedmont, began to appreciate it, dreaming of it as "Generous Barbera. Drinking it, it seems to us - to be alone at sea - challenging a storm". With Paolo Monelli, mountaineer and writer, author of "Shoes in the sun, a chronicle of gay and sad adventures of mountain troops, mules and wine", Barbera is the "knave of Piedmontese wines, pauta track and scaccianebbie", with a dry taste and honest, wine of the civil history of the 900 in Piedmont. The most intense literary citation of Barbera belongs to Cesare Pavese, in a letter to a friend: "We ate so well that we couldn't tell our friends from Turin, the mushroom salad as we only eat it and a legendary Barbera were a nameless pleasure".
