VinificationDestemming, crushing, pre-fermentation cold maceration and long fermentation at 26°C with maceration of the pomace for over 20 days during which numerous pumping over and "delestages" are carried out. At the end of the alcoholic fermentation, malolactic fermentation follows in traditional oak barrels.
AgingHalf of it in small Allier oak barrels and the rest in large Slavonian oak barrels for 12 months. Followed by a long aging in the bottle.
