PRODUCTION AREA: Simonsberg Mountains

GRAPE VARIETY: Merlot 51%, Cabernet Sauvignon 34%, Cabernet Franc 9%, Petit Verdot 6%.

SOIL TYPE: Soil composed of granite, red clay, sandstone from the Table Mountain massif, shale.

AGE OF THE VINEYARDS: 13-27 years

VINIFICATION: Fermented in wooden tanks and stainless steel tanks. Exceptional colour, concentration, aromas and perfumes thanks to maceration in contact with the skins between 16 and 20 days.

COLOR: Deep ruby red

BOUQUET: The aromas of red plum, raspberry and cherry are predominant and overlap with wood and oak spices, toasted caramel and nuts.

PAIRING: Serve with lightly braised lamb in a parmesan crust, accompanied by celeriac. Also perfect with Meaux Pommery® mustard from Domaine des 30 Arpents.

TASTE: The mouth mainly presents hints of fresh red fruits with tannins with a soft texture and good persistence.
