Grape variety: 100% Refosco Dal Peduncolo Rosso
The destemmed and pressed grapes are fermented in steel macerators, alternately punching down, delestage and pumping over for a period of 10-12 days. Upon racking, the wine is decanted into stainless steel tanks and the pomace is pressed. The malolactic fermentation takes place in steel, followed by decanting into large 25 hl oak barrels and second passage barriques. After 12 months the wine is assembled and bottled the following month.
