Why one more year?

Before launching it on the market, years of kitchen tests and tastings among the most sensitive palates were necessary to understand how much just one more year of aging would improve the organoleptic qualities of Acquerello. Extending the aging period has proven to make the starch of the grains even more stable, offering extraordinary cooking resistance and an unprecedented capacity to absorb flavors.

When waiting is not just waiting…

To achieve this result, both rigorous controls of the aging conditions were necessary, such as humidity, temperature and state of conservation of the paddy rice, as well as checks on the quality of the rice in each phase, from delicate husking with propellers to tests in the kitchen, which have demonstrated exceptional versatility in all preparations, from the simplest dishes to the most elaborate recipes.

As in the one-year-aged version, also in the 8-year-old Acquarello we apply the unique process in the world of reintegrating the bud. This method restores the most important nutritional properties of brown rice to the grain, without sacrificing the practicality and consistency of white rice.
