The grapes are placed in the vat with the skins at a maximum temperature of 5 ° C for about 6/8 hours.
This method, cold maceration, allows you to extract a little color, which is different at each harvest, and allows you to preserve the aroma of the Pinot Noir grape.
Fermentation follows in steel tanks at a controlled temperature of about 18 ° C.
Bottling
In spring, the cuvée is made and bottled for the second fermentation. The wine is then aged with its own yeasts for a minimum period of 2 years.
