Rum is a distillate mainly produced in Central and South America. Today Martinique is the reference for the production of agricultural Rum: this differs from the industrial one because it is produced with pure virgin cane juice from which sugar is not extracted, while the industrial one is made from molasses. Since 1996, Martinique has been home to the only French AOC outside the mother country: the AOC Martinique allows the production of rum in 23 villages, requires a period for harvesting the cane, a yield per hectare, a specific fermentation and distillation process , and an alcohol not less than 40%. Furthermore, Rum Martinique includes the following categories of aging in wood: blanc (aging not exceeding 3 months), élevé sous bois (aging for 12 months), vieux (minimum aging of 3 years). In addition, there are additional supplementary refinements in the vieux category: VO (minimum 3 years), VSOP (at least 4 years), XO (at least 6 years). The company Habitation Saint-Etienne is based in Gros-Morne à Saint-Joseph in an ancient 19th-century sugar factory now considered a French historic monument. In 1994 Yves and José Hayot purchased the property Habitation Saint-Etienne with the desire to relaunch and protect at the same time the historicity of this brand.
