The latest novelty in the world of rum comes from the Philippines. It is Don Papa Sherry Cask Finish, the latest member of the Don Papa premium rum family.

Produced in limited lots, this new rum shares with its brothers the raw material: high quality molasses made from "noble" sugar cane grown on the island of Negros, more precisely in the western part of the island, a fertile territory volcanic dominated by Mount Kanlaon and characterized by a particularly warm and humid climate that make it one of the most suitable environments for this cultivation.

The "black gold", as the locals call the molasses, is then sent to the distillery located in the city of Bago, where it is distilled. The distillate is then left to age for four years in American oak barrels that previously contained Bourbon. This first aging is followed by a further period of aging of eighteen months in four different types of sherry casks, each of which gives the product particular aromas: Fino, Pedro Ximenez, Cream and Palo Cortado. The rums of the four barrels are finally carefully mixed to give life to Don Papa Sherry Cask Finish.

Unfiltered and bottled with an alcohol volume of 45%, this rum is characterized by the richness, complexity and harmony of flavors, the result of the quality of the raw material, the process of craftsmanship and the aging process.

With a light amber color, the nose has hints of ripe raisins, while it strikes the palate with its velvety texture and its delicate sweetness from which emerge notes of plum, dark chocolate and ripe figs.
