A limited edition rum distilled by Destilarias Unidas SA, in Peru, in 2004, starting from high quality molasses fermented for 72 hours and then distilled in a continuous column, the spirit obtained then ages for 12 years in ex Bourbon barrels and casks of Slavonian oak, in the tropical climate of Peru, and then refined for a further two years in ex-Ferrand Cognac barrels at Château de Bonbonnet, in France. It is a particularly refined rum, on the nose there are hints of caramel, dried figs, licorice, molasses that evolve into fruity tips of banana and almonds that are well balanced with wood, butter and almost mentholated notes; it is rich on the palate, immediately appears the wood, then the cooked apple, lemon, mango, hazelnut which fade to make room for spicy notes, white pepper, vanilla and nutmeg. The finish is long, with slight smoky hints. Ideal for meditation.
