The alcoholic fermentation of the pomace takes place in the must and then in the cellars, a process that guarantees a raw material rich in the best aromatic elements. The pomace are picked fresh from selected suppliers and are ensiled for a few months, starting from the time of the first racking. The distillation is done in a discontinuous system with eight copper stills, with direct steam to produce a "raw" grappa at about 75 degrees of alcohol. The "transformation" to the final alcohol content (50 °) is done with dilution with water and cold filtration, at a temperature that guarantees to preserve the aromatic component. Grappa with a limpid and crystalline appearance, it is rich and fine on the nose, rigorous in its scents. Harmonious to the aftertaste and characterized by a round and balanced bouquet.
