From meditation and from an end royal meal. The pomace is picked fresh from selected suppliers and is ensiled even for a few months, starting from the time of harvesting the grapes of origin. In this fundamental phase it is very important to preserve them from the air according to a delicate method of covering the silos to allow an environment favorable to the yeasts responsible for alcoholic fermentation. Distillation is carried out in a discontinuous plant with eight copper steam stills.
