The pomace of the great Piedmont DOC – DOCG wines comes from the Langhe, places where the vine has found one of its greatest expressions; the resulting Grappa finds an extraordinary and exciting balance resulting from tanning in underground pits and a long period of maturation in wood.

Grappa aged 15 years in wood.

Grape varieties
Nebbiolo from Barbaresco DOCG, Dolcetto d'Alba DOC and Barbera d'Alba DOC.

Origin and conservation of the pomace
Neive, Barbaresco, Trezzo, Treiso and Alba; DOC – DOCG areas. The pomace, chosen to be fresh and still dripping with must, mixed according to an ancient recipe by Serafino Levi, is immediately compressed in underground pits in order to obtain a natural tanning, capable of extracting all the aromas and flavors of the grapes .

Characteristics of the still
Discontinuous copper still, the only one in the world, still active with direct fire for the distillation of grappa.

Distillation system
“Grappa distilled by unaware people” with a discontinuous method over direct heat and with submerged pomace. The steam generated by the distillation of the pomace, enriched with alcoholic-aromatic components, is condensed with subsequent fractional distillation of the phlegm in a 7-plate copper column.
This procedure, perfected by Romano Levi and still rigorously respected today, guarantees the perfect maintenance of all the aromatic components, which are crucial for the organoleptic characteristics of Grappa.

Date of insertion into the wood
Immediately at the time of distillation.

Wooden permanence
Aging for fifteen years in classic Piedmontese barrels of around 700 litres, made of wood of different essences, stored in a room with the right humidity and at a constant temperature between 14 and 19 degrees C°.

Wood aging certification
Our Master Distiller and the Controller certify that this Grappa Riserva was aged in wood, for the period indicated above, before bottling.
