Nardin's flagship product, the Cantabrian anchovy, is caught in the spring months at the optimal time, with an ideal size. At Nardín we only use the highest certified quality anchovies, selected daily at the Getaria fish market.

Nardin anchovies are processed in a completely artisanal way. Once they arrive at our facilities, artisan hands clean them carefully, eliminating all thorns. They will then undergo a salting and maturation process, after which they will obtain the ideal consistency and flavour.
