Our jars in oil are a riot of colors, flavors and aromas that capture the essence of the season and of the Italian culinary tradition. Using Brisighella oil, renowned for its quality and authenticity, we have created a range of vegetable preserves that maximize the taste and freshness of our vegetables.
Each vegetable is cut and inserted manually by our collaborators with
dedication and skill, ensuring that each slice is precisely arranged
inside the jar.

Processing phases:
. Harvesting the vegetables
. Selection and washing
. Cutting by hand
. Scalding the vegetables in acidified liquid
. Cold jarring of the vegetables

. Filling with Brisighella extra virgin olive oil and sunflower seed oil
. Adding flavors to the jar
. Pasteurization
. Cooling in a blast chiller
. Storage in the warehouse
