PRODUCTION AREA Hatsukaichi

RAW MATERIAL Hattan Nishiki is used, a type of rice that gives softness and freshness. It is part of the Honjôzô-shu category, composed of rice, kôjie rice and a small amount of pure distilled alcohol.

FRAGRANCE On the nose it is fresh and floral, with notes of white flowers and apricot.

PAIRINGS Perfect with oysters and sashimi.

FLAVOUR Velvety and fruity with hints of apple and pear. Light finish with notes of cereals, a touch of freshness and bitterness.

Chugoku Jozo is a Japanese distillery founded in 1918. The company produces first-generation sake. Chugoku Jozo's Sakuramisen Jyunmai Ginjyo, of excellent quality and great balance and refinement, is obtained using the Hattan Nishiki rice variety and, following a long fermentation at low temperature, processed by selecting a specific type of yeast, namely Hiroshima Ginjo, governed by the Toji (cellar master), through the experience handed down over the centuries.
