The Boulard company operates a meticulous selection of four different families of apples: bitter (which give structure, balance and harmony), sweets (rich in sugars), bitter-sweet (which bring tannins) and the acidulous (which bring freshness). All apples must come from the Pays d'Auge region. The slow and precise aging of the distillate is obtained in oak barrels: the tannins of the wood gradually combine with the fruity aromas of Calvados, producing ever more amber shades of color with the passing of the years. Calvados can be enjoyed smooth or as an ingredient in cocktails and long drinks, and can also complement many fine culinary preparations.
