PELLEGRINO ARTUSI THE PHILOSOPHY OF THE KITCHEN:

Pellegrino Artusi was born in Forlimpopoli (Forlì) on 4 August 1820, to a grocer father from Romagna and the Risorgimento. Pellegrino lived for a long time in Forlimpopoli, attentive to the businesses that brought him to know many Italian cities. But in 1851 the famous brigand Stefano Pelloni, known as the Passatore (or, according to the definition of Pascoli, the courtly Passator) raised today as a symbol of Romagna, pushed him away from his homeland. The Passatore on the night of January 25th of that year seized the whole town, ransacking all the houses of the wealthy. Among these also that of the Artusi, sowing terror and making a Pellegrino sister go out of her mind. Artusi tried to escape the atrocious memory of his land by taking refuge in Tuscany. In 1852 he moved to Florence where he lived, except for a short period in Livorno, until his death. His works as anthropologist and scholar had little luck, he had instead that masterpiece of material philosophy which is: "Science in the kitchen and the art of eating well", the precious recipe book now happily reaching its hundredth edition.
