PELLEGRINO ARTUSI THE PHILOSOPHY OF THE KITCHEN: Pellegrino Artusi was born in Forlimpopoli (Forlì) on August 4, 1820, from a father grocer, from Romagna and Risorgimento. And in forlimpopoli lived a long time, Pellegrino, attentive to the trade that led him to know many Italian cities. But in 1851 the famous brigand Stefano Pelloni, called the Passatore (or, according to Pascoli's definition, the courteous Passator) raised today as a symbol of Romagna, removed him from his homeland. The Passatore on the night of January 25 of that year seized the whole town, ransacking all the houses of the wealthy. Among these also that of the Artusi, sowing terror and making a sister of Pellegrino go out of his mind. Artusi sought escape from the atrocious memory of his land by taking refuge in Tuscany. In 1852 he moved to Florence where he lived, except for a small parenthesis from Livorno, until his death. His works as an anthropologist and writer had little luck, but he had that masterpiece of material philosophy which is: "The science in the kitchen and the art of eating well", the precious recipe book now happily arrived at the hundredth edition.
