Vineyard: Land with dolomitic characteristics
limestone near the Castle of Monreale -
Königsberg, one of the very few vineyards in the
region structured as an authentic clos:
surrounded by woods and trained by guyot for over
30 years, with vines from Champagne.

Harvest: The bunches, subjected in the month of
July when thinning, they are harvested by hand
in crates, to ensure their integrity up to
pressing.

Winemaking: The first fermentation comes
steel duct. The method used for the
refermentation in the bottle is the classic one
provided for by Trentodoc. The ripening
on yeasts takes at least 48 months to obtain
an otherwise unattainable elegance.
Nothing is added to the disgorgement
"Dosage", in order not to alter the characteristics
naturally conferred by environmental factors
very favorable, from the time and from a workmanship
particularly careful craftsman.

Features: Bright straw yellow color,
cheerful, minute and continuous perlage. The scent
it is intense, of particular finesse, with hints
green apple, bread crust and an elegant
mineral note. The taste is dry, clean, elegant,
savory, enveloping, with a pleasant fresh note
persistent.

Pairings: Like any classy Trentodoc
it is an excellent aperitif and can be enjoyed at all
meal.
