ZERO Pas Dosé is the sparkling wine that best represents Enrico Serafino Alta Langa. The complexity of the terroir is fully expressed thanks to the meticulous execution of each step from the vine to the wine. Produced starting from the 2004 vintage, it is, by far, the first Alta Langa Pas Dosé ever produced.
The choice to avoid any dosage combined with late disgorgement allows ZERO Pas Dosé Enrico Serafino to affirm its evident singularity.

Cultivation method: Sustainable viticulture
Color: Light straw yellow. Delicious sparkling wine with fine and persistent "perlage".
Nose: Broad, complex, deep with hints of lime blossom, honey, ripe white fruit, citrus fruits and bread crust.
Palate: Complex, multifaceted, full-bodied, elegant and intense, with a vibrant structure and a very long mineral aftertaste. Special nose-palate affinity.
Serving temperature: 4 - 6 °C
Longevity: 10 - 15 years
Fermentation process: The bunches are selected by hand on the vibrating table and pressed in an inert environment (nitrogen) with a free-run must yield of 45%.
The entire process takes place without the use of augers in order to treat the grapes in the most delicate way possible.
The must is fermented in stainless steel tanks at a controlled temperature and stored for 6 months on the lees with bâtonnage.
Classic method: The second fermentation is carried out according to the traditional method of fermentation in the bottle, with aging on the yeasts for at least 60 months and late disgorgement. We proudly avoid any liqueur d'expédition by making ZERO as PAS DOSÉ.
