1 BOTTLE OF 75cl.

Enrico Serafino has applied parcel vinification since the birth of the Alta Langa docg. Parcellaire is obtained from the selection of some parcels that best represent the typically "scratchy" character of the denomination. The dosage, deliberately reduced in sugars, combined with the absence of distillates, eliminates any interference between the wine and its territory of origin.

Grape varieties: 95% Pinot Noir - 5% Chardonnay

Vineyard area: parcel selection from different municipalities

Alcohol: 12.50%

Food: It is the aperitif sparkling wine par excellence. Furthermore, it is also pleasant throughout the meal.

Altitude: 400-450 m/a.s.l

Harvested: 100% hand-harvested

Cultivation method: Sustainable Viticulture

Color: Straw yellow with golden reflections. Delicious sparkling wine with fine and persistent "perlage".

Nose: Complex, attractive, pleasantly incisive, with floral hints, white pulp fruit, bread crust and minerals.

Palate: Complex, vertical with citrus hints, vibrant and elegant, with a rich structure and a long pleasant aftertaste. Typical scratchy touch of the Alta Langa hills tamed by the parcel assembly.

Serving temperature: 4 - 6 °C

Longevity: 6 - 7 years

Fermentation process: The bunches of grapes are selected by hand on a vibrating table and pressed in an inert environment (nitrogen) with a free-run must yield of 55%. The entire process takes place without the use of augers in order to treat the grapes in the most delicate way possible.

The must is fermented in stainless steel tanks at a controlled temperature and stored for 6 months on the lees with bâtonnage.

classic method: The second fermentation is carried out according to the traditional method of fermentation in the bottle, with prolonged aging on the yeasts until the wine is completely ripe. The liqueur d'expédition added after disgorgement is prepared following our secret recipe which includes reserve wines and sugar (4.5 g/L).
