Vin Santo Santa Cristina is a historic Tuscan wine, which has always been a companion to parties, special occasions and conviviality. The grapes, dried for months as per tradition, are softly pressed while the fermentation of the must and the refinement of at least two years take place in small barrels. A rich wine, with natural residual sugar, perfect with desserts and blue cheeses.

THE CLIMATE
The first part of the 2019 season was characterized by mild temperatures and frequent rainfall capable of guaranteeing an excellent underground water reserve. The slight delay in the growth of the vines recorded in April was made up for during budding and the subsequent vegetative phases of flowering and fruit set, thanks to never excessive temperatures and a good amount of water due to the rainy spring. Starting from the month of July, sunny days were recorded with temperatures that were never excessive. The occasional rainfall during the last days of August gave way to a month of September characterized by warm and sunny days.

The harvest began in early September with the Malvasia and ended within ten days with the Trebbiano Toscano.

WINEMAKING
The harvest, which took place directly on the drying plateaus, allowed the integrity of the bunch to be optimally preserved. After the drying process, which lasted a few months, the grapes with a high and natural sugar content were softly pressed; the free-run must thus obtained was transferred directly into oak barrels where alcoholic fermentation took place. This stopped spontaneously when the wine reached 12.5% alcohol, preserving a natural residual sugar. The fermentation took place using mainly old Valdichiana mothers and partly specially selected yeasts. After a period of refinement of a few years, the wine was bottled in the autumn of 2020.

TASTING NOTES
Vin Santo Santa Cristina has an intense yellow color with amber reflections. The traditional hints of pastry stand out on the nose with notes of raisins, apricot, candied fruit and sensations of amaretti. On the palate it is full-bodied and soft, reminiscent of apricots in syrup; the finish is pleasant and balanced.
