These consignments, already identified at the end of the harvest or during refinement, are used in the production of the Arrocco.

Unlike the Scaccomatto, from some harvests, in order to guarantee the necessary production continuity, this wine is also produced with a small percentage of dried grapes for a few months in small boxes.

GRAPE VARIETIES Albana, harvested late and on several occasions, with a noble mold attack, plus a small percentage of dried albana in cassetine.

VINIFICATION: partly in 225 liter French oak barrels and partly in small steel tanks of 150 - 200 liters
