TERRITORY OF ORIGIN Coastal strip of Marsala and Petrosino
SOIL: medium texture, tending to sandy. Altitude: a few meters above sea level. Climate: Mediterranean, mild winters, limited rainfall, very hot and breezy summer.
VINIFICATION AND AGING Harvesting period in the second ten days of September, with advanced maturation. Vinification at a temperature of 18 ° -20 ° C. Fermentation is stopped with the addition of brandy aged at least 5 years in oak barrels. Aging for over 48 months in oak barrels of 80 and 50hl, with at least 6 months in barrique.
TASTING Color: intense gold with amber reflections. Bouquet: ethereal, with intense hints of melon and light notes of honey and medlar. Taste: sweet and persistent, with evident notes of apricot and cooked pear.
PAIRINGS Traditional: all Sicilian sweets with ricotta and pastry creams. Unconventional: all aged cheeses and spicy cheeses, to be combined with pears, grapes or cape gooseberry. Serve at 12-14 ° C.
