El Aziz from the Arabic “Il Magnifico” is the result of a late Grillo harvest. The harvest is carried out strictly by hand, in the first ten days of October, leaving the fruit to dry on the plant. This wine was born by chance during the 2003 harvest in Sicily, thanks to a very hot summer, which made the grapes ripen early.

VINEYARD

Type: Natural Sweet White.

Grapes: Grillo 100%.

Production area: Western Sicily.

Training and pruning: Counter-espalier, with Guyot pruning.

Altitude: 200 m. above sea level

Planting density: 5500 plants per hectare.

Yield: 40 quintals per hectare.

Harvest period: End of September.

IN THE BASEMENT

Fermentation: In steel.

Aging: In steel, six months in bottle.

TASTING NOTES

It has an intense straw yellow color with evident and marked golden nuances, tending towards amber. Perfumes and sweet scents that impress with their evolutionary complexity reminiscent of very ripe and dried white fruit, such as: pineapple, peach and apricot, and also: vanilla, honey and sweet spices, with soft and enveloping scents and aromas with great structure and harmony , warm with alcohol, with a delicate bitter finish.

HOW IT COMBINED

With blue cheeses (it's perfect with gorgonzola), or creamy desserts or even with delicate desserts such as: mousse, bavarois or savarin. Serving temperature 12°C
