From the sunny island of Pantelleria come the grapes of Zighidì, a Passito fortified wine that concentrates all the essence of the aromas of the lush land from which it comes. The warm light of the Mediterranean Sea is preserved in its golden color, with intense amber reflections, and in the citrus aromas that it releases in the glass.
Excellent aperitif with liver pâté and foie gras. It goes well with desserts of dried fruit, jam and chocolate. Try it with… Pecorino with onion jam.

GRAPE VARIETY: Zibibbo (Moscato di Alessandria)
VINIFICATION Part of the grapes, after harvesting, are laid out to dry in the sun for about twenty days. Passola, the grape concentrated by the sun in its organoleptic riches, is added to the fresh must and together they ferment up to an alcohol content of 5% vol. Wine distillate up to 15.5% vol is added to the partially fermented zibibbo nectar to block the fermentation process and thus preserve a good part of the sugars in the must.
MATURATION A period of about five months in vitrified cement tanks
