CHIANTI CLASSICO GRAN DOCG SELECTION
Castello di Ama San Lorenzo, takes its name from the wonderful San Lorenzo valley
overlooked by the eighteenth-century villas Pianigiani and Ricucci.
This wine is obtained from the best grapes coming exclusively from historical vineyards,
Bellavista, Casuccia, San Lorenzo and Montebuoni.
It is a complex wine, expression of Sangiovese grapes with a small presence of Merlot and black Malvasia.
Its characteristics are: finesse, elegance, intensity, length and freshness.
The Castle of Ama San Lorenzo has a remarkable ability to evolve,
over time it develops an aromatic complexity and expresses extraordinary power.
VINIFICATION The vinification was induced by indigenous yeasts and separated by variety in steel tanks at a controlled temperature between 30/33 °, with manual pumping over with a total stay (cuvaison) of 25 days for the Sangiovese, 27 days for the Merlot and 26 for the Malvasia Nera. After racking, the wine underwent malolactic fermentation in barriques.
AGING At the end of the malolactic fermentation, the assembly of the three varieties took place. Subsequently the wine is placed in fine-grained oak barriques, 22% new for about 12 months.
