VINIFICATION AND REFINING:
The Balocchi di Colore N°3 bunches are hand-harvested from the oldest parcel of the Vincigliata vineyard at the perfect level of ripeness. After the first selection in the vineyard, a second selection takes place in the cellar before destemming. At this point the Colorino grapes are subjected to soft pressing and placed in open barriques. Fermentation is spontaneous with indigenous yeasts with 4-5 manual punching down per day at the peak of fermentation, slowly decreasing to 2 very light punching down just to keep the cap of the marc wet. After fermentation the wine is moved to old barriques that are more than 20 years old, where the malolactic fermentation takes place. The wine is aged for about two years before being bottled.
