AGE OF VINEYARDS Over 70 years

VINIFICATION: After an initial selection in the vineyard, a second selection of the grapes takes place in the cellar on the two sorting tables, ensuring that only the best grapes are chosen. At this point, the Sangiovese grapes are gently pressed and transferred to 225L open barriques, steel vats or 50HL wooden conical vats, taking great care to keep each parcel separate from the others. Fermentations are carried out with indigenous yeasts with 3 manual pumping overs or punching downs per day at the peak of fermentation, then gradually decreasing to 1 after about a week.

FRAGRANCE: The nose is very fine and rich in facets, with hints of flowers to anticipate everything, followed by red fruits, spices and leather

PAIRINGS: Perfect in combination with structured land dishes, especially red meats

TASTE: On the palate it is warm and energetic, with elegance acting as a common thread throughout the sip

AGEING: Once fermentation is complete, the wine is transferred into barriques and wooden barrels, where malolactic fermentation and 18-month refinement take place. Each parcel is refined separately before the final blend is decided.
