AGE OF THE VINEYARDS: Between 25 and 50 years
VINIFICATION: The bunches of Balocchi di Colore N°8 are harvested by hand from the oldest parcel of the Olmo vineyard at the perfect level of ripeness. After the first selection in the vineyard, a second selection takes place in the cellar before destemming. At this point the Canaiolo grapes are subjected to soft pressing and placed in open barriques. The fermentation is spontaneous with indigenous yeasts with 4-5 manual punchings per day at the peak of fermentation, slowly decreasing to 2 very light punchings just to keep the cap of the marc wet.
TRAINING SYSTEM: Alberello and guyot
COLOUR: Ruby red
FRAGRANCE: On the nose the aromas of red fruit are linked to an intense note of pepper.
PAIRINGS: Perfect in combination with structured land dishes, especially red meats.
TASTE: On the palate it is elegant and fresh, with a nice acidity that supports the sip.
AGEING: After fermentation the wine is moved to old barriques that are more than 20 years old, where the malolactic fermentation takes place. The wine is aged for about two years before being bottled.
