A cellar for Pinot Noir
If you dedicate yourself 100% to a single variety, you can notice it not only in the vineyards. If, like us, you attach great importance to quality and the elaboration of the varietal character, you also have to set up the cellar according to these criteria and in the spirit of the grape variety.
With hands, wood and gravity
We harvest the healthy and perfectly ripe grapes by hand, which are immediately taken to the cellar. From the highest point of the cellar the grapes are separated from any impurities. They are then lowered into the stainless steel fermentation tanks using the force of gravity. Fermentation is at a controlled temperature, deliberately avoiding maceration before fermentation. After fermentation, the wines are transferred by gravity into stainless steel tanks for clarification.
