The White Oak Distillery, founded in 1888 by Eigashima Shuzo, produced classic sake until 1984, when it was expanded with the addition of whiskey stills. The stills of the distillery only work for one month a year so the amount of whiskey produced is always very small.
The distilled pot used is smaller than those used by Scottish and other Japanese distilleries, which in turn reduce the alcohol levels of fusel. As a result, Akashi whiskey does not require a long aging process, while its malt core is smooth and delicate.
