An ancient variety, a cross betwen Moscato and Catarratto, for a wine with concentrated aromas and complexity. It is grown at Regaleali near Case Vecchie. We try to play with different harvest times: one portion a bit early, to obtain freshness and minerality, and the remaining portion later, to give structure and body. The cricket (grillo)was used by the fairies as a horse, and existed in fairy tales "once upon a time," but in this wine exists in the here and now. It makes a fine travelling companion.

Production area: Regaleali Estate - Palermo - Sicily.
 
Vineyards: "Sant’Anna" Ha 5, "Piana Case Vecchie" Ha 3.
 
Training system: Espalier.

Pruning system: High Guyot.

Vines per Ha: 4,600.
 
Yield per Ha: 110 q.
 
Production method: In stainless steel tanks.
 
Fermentation temperature: 16/18°C.
 
Maceration: 15 days.
 
Malolactic fermentation: Not developed. 
 
Ageing: 4 months in stainless steel tanks with fermenting agents.
 
Alcohol content: 13% Vol.
 
Wine analytical data: pH 3.38 - TA 5.00 g/l - RS 1.00 g/l - TE 20.60 g/l.
