VINIFICATION TECHNIQUE The grapes, rather late, are harvested at the end of September and macerated at 13 ° C for 6 hours. The fermentation, at a temperature not higher than 15 ° C, lasts about 15 days and, like the following refinement until the following spring, takes place in steel.
WINE Bright straw yellow color. Fresh, fine and elegant bouquet, reminiscent of limoncella and grapefruit. In the mouth it is clean, fat and well balanced.
Gastronomic combinations: classic aperitif, which accompanies fish appetizers, molluscs and is pleasant with fresh and medium-aged cheeses.
