Unlike most of the white wines of Etna usually produced with the autochthonous Carricante, Passobianco is produced with 100% Chardonnay. Upon his arrival on Etna, Andrea Franchetti planted 4 hectares of Chardonnay, all between 850m and 1000m on the steep terraces of the Contrada Guardiola, where the loose and deep soil is composed of lava ash with a high mineral content.
The summer of 2020 was moderated many by rains, and generally by bad weather; at the end of July the heat returned, until the rains of August 10 and finally those of early September. Later, after the vats of white had fermented and everyone had gone to the beach with the majestic mountain in the sun, the rain came accompanied by some hail; a wind from the north blew all night and on October 1 the expected cold descended on the towns and villages. For about a month the sky remained clear and from 14 October all the red grapes began to ripen. The first to arrive in the cellar was the Cesanese d'Affile, more sensitive to the temperatures of the beginning of mid-October. It was October 24th when, after several tastings in the vineyard, the Petit Verdot also reached maturity, the grapes brought with them aromas of oriental spices and a mixture of crunchy red fruits, with the achievement of maximum balance in the mouth at dawn on October 26th , where we had to call even more grape harvesters from neighboring countries so as not to miss that moment.
