The name Cervaro derives from the noble family that owned the Castello della Sala during the 14th century: the Monaldeschi della Cervara. Chardonnay grapes combined with a small part of Grechetto for a wine designed to refine over time and represent the elegance and complexity of a unique place. Cervaro della Sala was one of the first Italian white wines to undergo malolactic fermentation and aging in barriques with the first vintage in 1985.

Climate
The 2022 vintage was characterized by generally warm and dry winter and spring periods. Starting from the month of June, also characterized by an absence of precipitation, temperature peaks were recorded; these climatic conditions did not cause particular stress to the vines thanks to the pedoclimatic conditions present in the Castello della Sala vineyards. The rains of the first days of August rebalanced the situation in the vineyard, ensuring the achievement of optimal maturity. The dry climate of this vintage guaranteed the perfect integrity and health of the grapes, allowing interventions in the vineyard to be kept to a minimum and giving healthy, balanced fruit characterized by a good aromatic profile. The Chardonnay harvest for Cervaro della Sala, considered to be of exceptional quality, began during the third week of August, with ripe grapes characterized by excellent freshness and an excellent aromatic profile. The Grechetto harvest took place after 3 weeks, around mid-September.

In honor of the Monaldeschi della Cervara
The name celebrates the Monaldeschi della Cervara, the historic family that owned the Castello della Sala in the 16th century.

The Barrique
Cervaro della Sala was one of the first Italian whites to carry out malolactic fermentation and aging in barrique.

From an idea
Cervaro della Sala was born from the desire to create a white wine capable of facing long refinements.

From a winemaker
In 1985, Renzo Cotarella, then winemaker at Castello della Sala, produced the first vintage of Cervaro della Sala.
