GRAPES: 100% Verdicchio only from our own vineyards.

Production reduced in the vineyard to 60/70 quintals per hectare (from the 140 quintals allowed by the Classic specification).

We have five vineyards with different exposures and different altitudes from 220 to 380 meters above sea level. and different ages from 15 to 45 years.

Our vines are in Certified Organic Cultivation (Organic Growing).

VINIFICATION: we vinify the different vineyards separately. Manual harvest with soft pressing and selection of only the first pressing. No contact with the skins. The wines remain on the lees until spring. We do not induce malolactic fermentation, letting the wine behave as it wants. The vinification takes place in steel. Bottling is always done by blending wines from different vineyards to ensure continuity of style as much as possible.

COLOR: bright straw yellow.

BOUQUET: delicate but persistent, pleasantly fruity, hints of golden apple, almond, anise.

PAIRING: excellent aperitif, fish pasta and risotto, fish broths, white meats, fresh cheeses.

SERVING TEMPERATURE: 8/10 °

ALCOHOL CONTENT: 13%
