Winemaking

After careful selection on the sorting bench, the grapes are destemmed and pressed directly in an inert gas atmosphere, keeping each batch coming from the different vineyards separate. The must obtained remains spontaneously clarified overnight in steel tanks at a controlled temperature of 8-10 degrees. This is then followed by refinement on the fine lees for approximately 6 months with weekly batonage. After a careful tasting, we proceed with the assembly of all the masses obtained, to then prepare the wine for final bottling.
