POGGIO DI CARO is a faithful representation of the sandy soil of the Roero. Crunchy, fruity and very pleasant, it represents the youngest part of the UNESCO area of southern Piedmont.
POGGIO DI CARO is a white wine with a delicate intriguing character.

Grape varieties: 100% Arneis

Vineyard area: Canale

Alcohol: 13.50%

Food: It goes well with rice, pasta with light sauces, fish and white meats. Also excellent as an aperitif.

Color: Straw yellow with golden reflections.

Nose: Attractive, fragrant, with special aromas of apple, pear, chamomile, tropical fruit and fresh mineral character. Interesting and typical aromas of Arneis grapes.

Palate: Fresh, dry, delicate, harmonious and pleasantly fruity, soft with a medium body and pleasant mineral aftertaste. Perfect nose-palate affinity.

Serving temperature: 8 - 10 °C

Longevity: 2 - 3 years

Pre-fermentation procedures: The bunches are selected by hand on the vibrating table and cooled with carbonic snow to avoid oxidation and considerably reduce the use of sulphites. Subsequently, these are subjected to soft pressing.

The entire process takes place without the use of augers in order to treat the grapes in the most delicate way possible.

Fermentation process: A part of the must is cooled and kept in an inert environment (nitrogen). This phase lasts from 12 to 15 hours at 8-10°C (cryomaceration). Subsequently the fermentation takes place in stainless steel tanks at a controlled temperature.

Refinement: POGGIO DI CARO is refined only in the bottle for approximately 3 months before its release on the market.
