It has an enviable freshness with moderate alcohol content, floral tones of certain elegance, very fine vegetal flavors and a sweet and ripe citrus taste.
VINEYARD Type: White.
Grapes: Grillo 100%.
Production area: Western Sicily.
Training and pruning: Counter-espalier, with Guyot pruning.
Altitude: 150/450 m. above sea level
Planting density: From 4500 to 5500 plants per hectare.
Yield: 85/90 quintals per hectare.
Harvest period: End of August.
IN THE CELLAR Fermentation: 20% in barrique, 80% in steel.
Aging: 20% in barrique and 80% in steel, three months in bottle.
TASTING NOTES
It is a fairly savory wine, as part of the grapes come from vineyards adjacent to the sea coast in front of the island of Mozia.
These characteristics make it an evocative wine that contains all the Sicilian nature of the sea, the summer breezes and the citrus fruits of Sicily.
HOW IT COMBINED
Fish, molluscs and crustaceans, fresh cheeses, cured meats, eggs and risottos, pasta with light sauces, chicken, fresh pasta. Excellent as an aperitif. Serving temperature 12-15°C
