In Sicily this vine has spread considerably since the mid-nineties.
The best productions are undoubtedly obtained from vineyards coming from positioned lands
around 400 meters above sea level. and beyond. The fresh version, vinified in steel, is by far the most prevalent among Sicilian producers, a choice also shared by Our Cellar.

Grapes: Sauvignon Blanc 100%.
Production area: Western Sicily.
Training and pruning: Counter-espalier, with Guyot pruning.
Altitude: 550/600 m. above sea level
Planting density: 5500 plants per hectare.
Yield: 70 quintals per hectare.
Harvest period: August.
IN THE BASEMENT
Fermentation: In steel.
Aging: In steel, six months in bottle.
TASTING NOTES
It has a pale straw yellow colour, with herbaceous and vegetal aromas of green pepper, tomato leaf and mown grass. Intense fruity notes evoke exotic fruits such as pineapple and banana, and floral notes reminiscent of elderberry, broom and hawthorn.
HOW IT COMBINED
With hot and cold fish appetizers, including steamed ones, it is undoubtedly one of the best combinations with sushi and sashimi. magnificent with tartare, fish carpaccio, oysters, but also with white meats and fried or grilled mushrooms. It goes well with all aromatic preparations containing tomatoes, courgettes and peppers.
