Grapes: Chardonnay 100%.
Production area: Western Sicily.
Training and pruning: Counter-espalier, with Guyot pruning.
Altitude: 400/450 m. above sea level
Planting density: 5000 plants per hectare.
Yield: 80 quintals per hectare.
Harvest period: August.
IN THE BASEMENT
Fermentation: In barriques.
Aging: Six months in barrique on yeast lees and six months in the bottle.
TASTING NOTES
It has an intense straw yellow color and an enveloping aroma, with hints of vanilla and ripe fruit, above all cedar and apricot. The flavor is soft, rich and decidedly long-lasting; the intense and complex aroma. The taste is warm, full, elegant, with excellent persistence and a notable structure.

Tuna or swordfish tartare, fish soup, fish-based dishes, elaborate fish, meats
whites and medium-aged cheeses.
