Our interpretation of a rosé wine takes inspiration from international tradition, in particular from the French one which considers Merlot grapes among the most suitable for the production of this type of wine; In Italy, Merlot, introduced in the mid-nineteenth century, found ideal environmental conditions in many northern regions. It arrived in Sicily around the eighties of the last century, demonstrating truly surprising adaptation.
VINEYARD
Type: Red.
Grapes: 100% Merlot.
Production area: Central Western Sicily.
Training and pruning: Counter-espalier, with Guyot pruning.
Altitude: 850 meters above sea level.
Planting density: 5000 plants per hectare. Yield: 85 quintals per hectare.
Harvest period: Mid-August
IN THE BASEMENT
Fermentation: in steel at a controlled temperature (16 degrees) for 8 days.
Aging: In steel with rest on the yeasts for approximately three months
WINEMAKING
The must is decanted into steel vats filled with nitrogen at a temperature of 0 to 1 degree for approximately 15 days in contact with the suspended pulp (stabling).
TASTING NOTES
Of a pale pink colour, floral notes of peach, jasmine, orange blossom and boxwood vegetables emerge on the nose. In the mouth fruity sensations of black cherry, snuffbox peach, black blueberries and exotic fruits such as litchi and grapefruit.
HOW IT PAIRES It goes excellently with fish and shellfish appetizers, smoked meats, seafood dishes, fish, molluscs and crustaceans. we suggest a "modern" pairing with sushi and sashimi. Serving temperature: 10-12°C
