Fermentation: 100% in steel.
Secondary fermentation: 2 months in autoclave.
Analytical data: Alcohol 12%.
VINIFICATION
The base wine is obtained from the low-temperature fermentation of the must resulting from the
soft pressing of the whole grapes. The secondary fermentation takes place in an autoclave at a temperature of
about 15° C for a period of two months.
TASTING NOTES
Part of the grapes come from vineyards adjacent to the sea coast in front of the island of Mozia.
A sparkling white wine with a straw yellow color with greenish reflections. On the nose, fragrant,
floral and fruity scents while in the mouth, vegetal flavors typical of the grape variety used. These characteristics enclose all the Sicilianness of the sea, summer breezes and Sicilian citrus fruits.
HOW TO PAIR IT
A young and lively wine, ideal for accompanying light and tasty dishes, grilled fish dishes,
molluscs, crustaceans, white meats and sautéed or baked vegetables. Excellent as an aperitif.
