Vinification: careful evaluation of the harvest period; careful selection of the grapes both on the plant and in the cellar, with particular attention to exposure to the sun and the integrity of the bunches brought to manual sorting. Temperature control, pressing of the whole bunch, short cold static decantation of the must.
Fermentation: spontaneous fermentation with indigenous yeasts
Aging: permanence on its lees for 8 months with movement of the fine lees; 12 months in bottle
Serving temperature: 12°C.
Organoleptic characteristics: light yellow. The nose is fine, complex and very intense with hints of exotic fruit and yellow flowers; it also expresses elegant citrus aromas and light spicy notes that enrich the bouquet. The palate is decisive, very fresh, supported by a very long mineral finish.
In recent years surprising results have been achieved by considering the influence of the lunar phases (both in the countryside and in the cellar) by putting the Biodynamic philosophy into practice.
Thanks to this new approach, the territory regains its true identity, considered the basis for the growth and enhancement of all the wines produced.
