Vinification: careful selection of the grapes both on the vine and in the cellar, with particular attention to the integrity of the bunches brought to manual sorting, pressing of the whole bunch, short static cold decantation of the must, spontaneous fermentation with indigenous yeasts
Aging: 12 months in steel vats on its lees, with movement of the fine lees, 12 months in the bottle
Serving temperature: 13-15 °C.
Organoleptic characteristics: straw yellow with golden reflections and good brilliance. The nose is fine and intense with hints of yellow flower notes: broom, wild chamomile, and ripe yellow fruits. Dry and balanced wine, round and warm, well supported by a pleasant fresh and savory finish
Pairings: fish salads, risotto with seafood, pasta dishes with fish, cheese or vegetable based sauces, omelettes and omelettes, white meats, boiled meats, fermented cheeses
Producer's notes: peak of refinement after 2 years, longevity over 6 years
