VINIFICATION AND REFINING
Strict manual selection of grapes in the vineyard. Spontaneous fermentation takes place in stainless steel at a controlled temperature of 18 °C max. Malolactic fermentation is carried out. The refinement takes place partly in large Austrian oak barrels for 1 year, the remaining part in steel tanks. Following the aging period, the two masses
are assembled. Before being put on the market, the wine rests for 4 months in the bottle.
